In the Kitchen


Groceries have been bought for the next two weeks, and now it is time to head into the kitchen and start my pre-baking. For the entire week of Thanksgiving, I am responsible for the company's breakfast, lunch, and dinner. I generally do a large lunch/dinner whenever we have company and then everybody snacks around in the evening time. The one meal that causes me frustration is the breakfast. It usually requires me to get up EXTRA early to prepare enough whatever to feed everybody. This year I have decided to make some things that can be prepared ahead of time. I tried a new recipe this morning for a french toast type casserole that is made the day before and baked the next morning. Unfortunately, it wasn't good. Truth be told, it was down right nasty! So we won't be putting that on our menu. The other issue that I have with my family that is coming is that they don't eat eggs! That eliminates all of my great breakfast casseroles with eggs. So...
I am heading into the kitchen this morning to make pumpkin bread and banana nut bread to freeze for Thanksgiving morning breakfast. I am also starting to make homemade wheat bread to freeze for a quick breakfast. If you have any great non-eggy type recipes, please feel free to share them!!!

I have THE best pancake recipe ever...and since you have a wheat grinder too I can share this with you. :)

The dry ingredients can be mixed the night before, wet added in the morning and they are ALWAYS a hit with everyone I've ever made them for. Even my friend's husband who "didn't like pancakes" before mine loves these! (Freeze great too!!)

2.5 C Fresh ground flour, white or red wheat
2 Tbsp. Baking Powder (reduce to 2 tsp if you use buttermilk)
1 tsp. salt

2 Tbsp. Honey
2 Tbsp. Vanilla
2 Tbsp. Oil
2 Eggs
2 C. Milk or Buttermilk (however, my husband likes them best made with heavy whipping cream from the local dairy!)

Will your company eat eggs in bread things, or not at all??

I butter my electric skillet and then measure the batter out with a 1/2 C. Makes about 16, 4" pancakes

I use my pizza crust recipe to make my cinnamon rolls. I found this out when we've made personal sized pizza's and I've had dough left over. I'd refrigerate it overnight and make cinnamon rolls the next morning. So the dough can be made the night before as it takes very little time to rise once warm I've discovered.

7.5 C Fresh ground wheat flour
3 Tbsp. Dry Yeast
1 Tbsp. Sugar
1 Tbsp. Salt

1/4 C. Oil
plus 2 Tbsp. Oil

3 C. Warm Water

Mix dry ingredients in a large bowl. Combine oil & warm water, then mix into dry ingredients. Let sit in bowl for 5 minutes. Knead until smooth. Place back in bowl, cover and refrigerate overnight.

The next morning make dough into a rectangle, add cinnamon, sugar or honey and butter (or however you make yours)

Place in stoneware or glass dish, let rise 5-10 minutes (watch, adjust time accordingly) in a warm oven and then they are usually ready to bake! 10-12 minutes at 400F (I have cheated before and helped them rise a little faster in the microwave...although I try to stay away from microwaving our food!)

Oh and just one more thought!!

I like to eat Acorn Squash for breakfast sometimes too. I bake one in the day when I have time and then reheat in the oven the next morning. Add a little butter and sometimes I add brown sugar or honey too!

I like Pancakes and waffles. Do you have to get up extra early to make me those things? If so, what time should I sneak into your room and set your alarm clock for?

Bake a potato for each person the night before. In the morning slice them and set aside. Meanwhile, have onions, mushrooms, peppers and whatever else you like prepped. Cube one of those nice slabs of ham into cubes. Saute the veggies in a cast iron skillet, add the ham cubes. Lastly, brown up those potatoe slices. The cast iron adds a lovely crispness to the potatoes. Serve with toast. This is super quick and everyone always likes it. For those who want an egg, the skillet is already ready. Or not....

What about Monkey bread? Go to all recipes. I also make breakfast parfaits using yoguart on the bottom and top with whatever fruit cut into pieces I have on hand. Sprinkle with a bit of cinnamon. Vio'la!

What a great idea. Sounds yummy! I make a campers casserole that has fried potatoes, bacon, scrambled eggs, green peppers and onions, and cheddar cheese. I throw it all into a big bowl and serve. I will give yours a try probaly this week. Thanks for the suggestion!

YES, I am well aware of the fact that you love pancakes and waffles. Just for your information, you will probably never be served homemade waffles at my house because they take too long to cook enough for the whole gang! I also happened to remember that you eat Pop Tarts if I get in a bind. Actually, you are an easy keeper! By the way, stay away from my alarm clock!!!! Love ya!

I've been meaning to write a post on how to prepare and cook acorn squash..I've already taken the pictures, all I have to do is write the post. I'll let you know when I do! I decided to do it b/c a friend of mine was over at my house the other day and wondered what that green thing on my kitchen counter was! I guess it's not as popular with everyone else as it is my family! :)
