Apple Enchilada Recipe


I have been asked to share a few of my Mexican recipes from last Friday night's fiesta football dinner. I am starting with the best part of all...the dessert. (After all, if there is a good dessert on the table who needs anything else)? Well, except a good cup of coffee!!!
APPLE ENCHILADAS
1 Can Apple Pie Filling
6 (8 inch) flour tortillas
cinnamon sugar
1/3 cup butter
1/2 cup white sugar
1/2 cup light brown sugar
1/2 cup water
Spoon pie filling into shells. Sprinkle with cinnamon and sugar. Roll up like an enchilada. Place in a greased baking pan. Bring butter and next 3 ingredients to a boil. Simmer 3 minutes and stir often. Pour over enchiladas. Let set 30 minutes. (this is important. it softens the enchiladas). Bake at 350 for 20 minutes. Serve warm with a dusting of powder sugar! Enjoy!!

This looks delicious. Did you ever make apple pie in a jar? It is homemade and canned apple pie filling. It is very easy to make!!

This was the first year I have ever canned my own Apple Pie filling. You're right...It is great!!!
